Cookie Butter Cookies

Whoever the genius was who decided to ground up cookies and make cookie butter, has made my life so much better. But then we one-upped that, and took that cookie butter and remade it into these soft, gooey cookies and I am not mad about it. These cookies are so so so good and buttery, with the perfect amount of cinnamon flavor. They taste almost like a gingerbread cookie and are so easy to make!
If you make these, be sure to let the dough sit in the fridge or freezer to firm up so you get this perfect thick pillowy, fudge texture, I promise it is worth it!
