The BEST Soft Baked Gingersnap Cookies

I am not exaggerating when I say you NEED these cookies in your life. I know people may get scared away from ginger cookies because we think of those cardboard gingerbread houses. But these cookies are nothing like those. They are so incredibly soft and packed with so much flavor, then rolled in sugar to finish them off. I will not lie, my family has not gone through two batches of these in a week and are fighting over who's going to have the last one. I think that just means I am going to have to make more and I am not mad about it. They are seriously that good!

I love putting these in the freezer for 10-15 minutes while the oven preheats so they keep their shape and come out nice and fluffy!
